Catfish should be moist with no fish odor, and almost translucent. They can be anywhere from ivory white to pinkish to yellowish in color.

At home, refrigerate in a container or keep wrapped until fish is ready to be cooked. Cook within two days of purchasing. Keep raw seafood separate from other foods. Wash working surface (including cutting boards), utensils and hands after touching raw seafood. Cook seafood thoroughly, keep hot foods hot, refrigerate leftovers immediately or discard.
