Eating Healthy on a Budget

Whether it’s Valentines Day or you are craving a seafood dinner, enjoy this easy recipe for pasta with mussels. White wine and herbs make it irresistible! Serve with crusty bread and a crisp salad.

Mussels Marinara

Makes 4, 8 ounce servings
Prep Time: 15 minutes
Cook Time: 15 minutes

8 oz uncooked whole wheat pasta
2 Tbsp olive oil
1 cup chopped onion
2 tsp chopped garlic cloves
2 cups diced tomatoes
1/2 tsp red pepper flakes
1 tsp dried oregano
2 lb whole mussels
1/2 cup white wine
1/2 cup chicken broth
2 Tbsp fresh parsley, chopped
1 Tbsp lemon juice

Cook pasta according to package directions, omitting salt. Drain and keep warm. While pasta is cooking, heat oil in a large skillet over medium heat. Cook onion and garlic for 2 to 3 minutes. Add tomatoes, red pepper and oregano. Cook for 2 to 3 minutes. Add mussels and wine. Cover and simmer for 2 minutes, until mussels start to open. Add broth, parsley and lemon juice. Cover and continue to simmer for 2 to 3 minutes until cooked through. Serve mussels with sauce over pasta.
