On St. Patrick’s Day you can wear the green, eat some green and save some green, too! Enjoy this low fat creamy potato soup with touches of emerald broccoli as a start to your dinner or festivities.

Potato Broccoli Soup
Makes 4, 2-cup servings
Prep time: 10 minutes
Cook time: 25 minutes

1 lb potatoes, peeled and cubed
1/2 cup chopped onion
2 cups water
1 1/2 cups broccoli, cut in bite size pieces
2 Tbsp. flour
2 cups nonfat milk
1/4 tsp. salt
1/8 tsp. ground black pepper
Grated nutmeg to taste

Bring potatoes, onions and water to a boil in a large soup pot. Cover and simmer for 15 minutes. Add broccoli and continue to cook until vegetables are tender, about 7 minutes. Stir together flour and milk and add to vegetables. Continue to simmer until mixture thickens, about 5 minutes. Season with pepper and salt and sprinkle with nutmeg before serving.

Nutrition information per serving: 160 calories, 1 g fat, 0 g saturated fat, 2 mg cholesterol, 210 mg sodium, 33 g carbohydrate, 3 g fiber, 8 g protein.
