PULLED PORK SANDWICH
Servings: 16 sandwiches

4 pounds Giant fresh boneless pork shoulder butt roast or 7 pounds Giant bone-in pork shoulder butt roast
3 cups of sliced onion
1 cup Giant brand Dr Bob soda
1 - 18 ounce bottle Giant barbeque sauce (any flavor) or use recipe below

  • Slice onion and place half in the bottom of the slow cooker.
  • Place the pork roast on top of the onions and cover with the remainder of the onion. Pour soda over the roast and onions. Cover and cook on LOW for 8-10 hours. (Optional: You may turn your roast half way through the cooking time if you are available. Be sure to do this quickly as you lose heat each time you remove the lid.)
  • Remove the meat, strain and discard the remainder. With two forks, shred the meat, discarding any remaining fat, bones or skin; most of the fat will have melted away.
  • Return the shredded meat to the crock pot, stir in the barbecue sauce. Continue to cook for another 1- 2 hours on LOW until heated through with sauce.
  • Serve on your favorite roll with additional barbecue sauce and coleslaw.

BARBEQUE SAUCE

1/2 cup Giant brand Dr Bob soda
1 cup Giant ketchup
1/4 cup Giant Worcestershire sauce
1 teaspoon liquid smoke
3 tablespoon Giant steak sauce
1 teaspoon onion flakes
1 teaspoon garlic flakes
1/2 teaspoon freshly ground black pepper

  • Combine all the ingredients in a heavy non-reactive saucepan and gradually bring to a boil over medium heat.
  • Reduce the heat slightly to obtain a gentle simmer.
  • Simmer the sauce until reduced by 1/4, about 6 to 8 minutes.
  • Use right away or transfer to a large jar, cool to room temperature, cover, and refrigerate.

Per sandwich with pork, barbeque sauce, and roll: 354 calories, 14 g fat, 4 g saturated fat, 2 g dietary fiber, 17 g protein,45 mg cholesterol, 304 mg sodium, 43 g carbohydrate


COLE SLAW
Serves 16 for sandwiches

½ cup low fat Giant mayonnaise
2 tablespoons Giant apple cider vinegar
2 teaspoons Giant granulated sugar
1/4 teaspoon Giant salt
¼ teaspoon Giant pepper
2 cups shredded cabbage

  • Mix mayonnaise, apple cider vinegar, granulated sugar, salt, and pepper.
  • Mix in shredded cabbage, chill and serve.

Per serving: 34 calories, 2 g fat, trace saturated fat, 3 g carbohydrate, trace dietary fiber, 89 mg sodium, 1 g protein, 3 mg cholesterol
